Braised Balsamic Cabbage

Braised Balsamic Red Cabbage

Ingredients:

  • 3 Tbs. Wild Mushroom & Sage Olive Oil
  • 1 purple onion, thinly sliced
  • Sea salt and freshly ground pepper, to taste
  • 1 Tbs. Yellow Mustard 
  • 1/4 cup Serrano-Honey vinegar
  • 1/4 cup Tangerine Balsamic
  • 1 red cabbage, about 2 lb., cored and cut into thin shreds
  • 1/4 cup Feta Cheese

Directions:

In a large fry pan over medium heat, heat the oil over low-medium heat. When the oil is hot, add the onion and a pinch of salt and sauté until the onion is soft and translucent, 5 to 7 minutes. 
While onion is cooking, whisk the mustard, tangerine balsamic and serrano- honey vinegar together.

Add the cabbage and mustard-vinegar mixture. Toss the cabbage and onion well to coat with the liquid in the pan. Cover the pan and cook the cabbage, stirring occasionally, until it begins to wilt, 25 to 30 minutes. Uncover and cook until the cabbage is tender and most of the liquid has evaporated, 25 to 30 minutes more.

Taste and add a pinch of salt and pepper. Remove the pan from the heat and toss feta cheese over the cabbage. Transfer the cabbage to a warmed bowl and serve immediately. Serves 4 to 6.
