Zucchini Muffins
3/4 cup all purpose flour
1/2 cup sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
4 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1/4 cup Bluff Cove Butter Olive Oil
1 cup grated zucchini
Mix the dry ingredients in a bowl. Add the egg, olive oil and zucchini and mix till moistened.
This will make about 9 small muffins. I like to use the paper baking cups to make clean up easy and I spray them with a light coating of olive oil so they separate from the paper nicely. Bake at 350 for about 15 minutes. These keep nicely stored in a Ziploc bag in the fridge.
